Just a bad batch I guess?

This last batch we bought on Amazon tastes terrible. I think its rancid or something. We have had it a few months, but its still well within the best by date. Every single one I have opened, just tastes bad. So terribly annoying because now I feel so awu by it that I am afraid to try it again. Like when you are in your early 20's and rum and cokes just didn't agree with you enough times, that now, you cannot ever drink it again, no matter what? Its like that.

Economical way to buy coconut milk

We've been enjoying Thai curry a lot lately. I buy a variety of premixed curry pastes and keep them in the refrigerator so I can make a double batch of curry when the spirit moves me. It's a quick, delicious meal I can prepare in less than an hour, even with frozen protein, which I usually keep on hand, such as chicken breasts, shrimp, pork, and fish. The Thai Kitchen Unsweetened Coconut Milk makes for an excellent main course. I like these aseptic cartons; they are more economical (and environmentally friendly, I *think*?) than cans. One carton equals (almost) two cans you commonly find in the supermarket. It should be noted (although the manufactur makes NO mention of this on the Amazon product page) that the product in cans includes guar gum, whereas the seemingly identical product in these cartons does not. Honestly I don't really think it matters. Not sure why the difference, but I've made curry many times with each version of the coconut milk, and never noticed a difference.I like the cartons because they're slightly more economical than the cans, and I like to make a double batch so we can eat one for dinner and refrigerate or freeze the other half for later. When I freeze some, I just move it back to the refrigerator a day or two before we use it and it's thawed (sometimes not 100% if it's the next day, but always if it's been 48 hours).By the way, I stopped buying Thai Kitchen curry pastes in the supermarket. Although we enjoyed them and there's nothing wrong with the taste or quality, they are quite a bit more expensive than the ones I buy here on Amazon. I recommend Mae Ploy curries in four "flavors:" yellow, Massaman, panang, and red.Yellow (our favorite): https://www.amazon.com/gp/product/B004AOFZPW/ref=ppx_yo_dt_b_asin_title_o04_s00?ie=UTF8&psc=1Massaman (a close second): https://www.amazon.com/gp/product/B004AOLH9U/ref=ppx_yo_dt_b_asin_title_o07_s00?ie=UTF8&psc=1Panang (also very good):https://www.amazon.com/gp/product/B000EICJWA/ref=ppx_yo_dt_b_asin_title_o07_s00?ie=UTF8&psc=1Red (honestly, way too hot for our taste buds, but you can just use 1/2 or 1/4 as much to tone it down, or it can also be used as a supplement to the others; I add a little (1:10) of this to the Massaman paste to give it little more oomph and complexity):https://www.amazon.com/gp/product/B0091UW4QS/ref=ppx_yo_dt_b_asin_title_o08_s00?ie=UTF8&psc=1If you really get into this, you might want to consider buying a small container of tamarind paste, which the Mae Ploy Massaman curry paste label directions suggest. We really enjoy it! Adjust quantity to your taste. A little tamarind paste goes a long way!:https://www.amazon.com/Tamicon-Tamarind-Paste-Grams-Ounces/dp/B00I9P242U?pd_rd_w=iTRbN&content-id=amzn1.sym.16b389cf-68c1-4ee8-9417-1a50799b2607&pf_rd_p=16b389cf-68c1-4ee8-9417-1a50799b2607&pf_rd_r=HJXZ35K5RGMJKTZHRM3Q&pd_rd_wg=bbTxm&pd_rd_r=7f80972f-7e80-40ac-ba1d-510be7cf6faa&pd_rd_i=B00I9P242U&psc=1&ref_=pd_bap_d_grid_rp_0_1_ec_tEnjoy!

Pours out only the liquid. Cream is solid and stuck with a bad taste

I bought this Tetra Pak variation so I could reseal it and take it with me since I live in 2 places and so my once open cans wouldn’t spill. But despite shaking as vigorously as I could, the huge chunk of coconut cream will absolutely not reconstitute with the liquid. I don’t even think the hardware stores paint mixer could shake this back to a full liquid state! Then it won’t pour out the spout and needs the box cut anyway, defeating the purpose of the resealable top! You can’t even squeeze it out. I also wanted since this doesn’t have the guar gum like in the cans. Ugh… why is the idea of convenience never how it actually is in real life. After tasting it I changed my 3* to 1. Tasted so bad and ruined 2 smoothies with 2 different cartons. Called the company to inform them of this product that wasn’t thought out very well and to report the bad taste. Had it only been the clump, no big deal. I like it to make creamy smoothies but a foul taste tells me something else is wrong with their food handling and packing and needs to be addressed. Their customer service is making amends and told me also to call Amazon for a refund which they did.Hopefully the cans taste like they usually do. I’ll just start putting left overs in a jar for travel

Big huge chunks of coconut in the milk that wont mix

This is honestly my favorite coconut milk. Recently the quality control has been upside down though. I can usually shake the carton and pour for my coffee and its perfect. Lately there have been huge unmeltable unmanageable coconut meat chunks in it. So big it wont leave the carton. We have to break the carton and put in a food processor to mix it to get what we used to get this creamy texture. We buy 6 packs monthly. So something happened because its not the best lately. I hope the manufacturer sees this so they can fix it and continue with high quality coconut milk.

Best ice cream you will ever make!

It is the richest ice creme mix you can make. The tub for the machine has to be in the freezer overnite so it frezzes up a refrigerated liquid pretty well w/out putting it back to cool it more.Shake the Thai, pour Thai into bowl, add 2/3 cup sugar, Jello Inst pudding 3.5 oz, mix it heavy.I put mix in the refrigerator for overnight but it will still be a good run if you just put it into the Ice creme machine. It has to be the last thing going into the ice creme maker!!I used 4 tsp of instant coffee in place of pudding. Nice coffee ice creme.

My favorite coconut milk!

This is my favorite coconut milk because you can use some and reseal the carton! What a great idea! Cans are not convenient, because if you don’t use it up all at once, you have to find something to store it in! That’s unhandy, but I use cans sometimes if a recipe calls for a can. This is good for when you don’t need a full can, or need just a little more than one. It’s usually of a good creamy consistency and I have had very little problems with it, although warmer temps for shipping are better than too cold!
