Wow
This is the best chorizo seasoning I have found. I am very picky about my chorizo, and I was very skeptical of how this would taste. It is amazing! I used it mixed with deer and pork fatback. Chorizo and eggs is my favorite meal, and this does not disappoint. I highly recommend it if you are making your own sausage.

I'm so thrilled and and so pleasantly surprised at how amazing the flavor is!I was looking for authentic tasting chorizo seasoning so that I could have the same flavor and put it in vegetarian dishes and BOY did this stuff deliver!

My Go-to
This is an excellent chorizo seasoning. It is my go-to. I use it mostly for making ground turkey chorizo. I do add cayenne and vinegar to my batches.

Needs proportional quantities
I like Legg's seasoning for when I just want to make a quick batch of sausage. I always add some items like chopped jalapeno's and/ or habanero dust but the seasoning works well alone too. I just wish it broke down the amount to use per pound when I'm not making 25 lbs. at a time. I would always look it up but now I have it labeled on the jar I keep it in. The recommendation is 1 Tbsp. per lb. but I always add a pinch more.

1 to 2 tablespoons per pound of ground meat
I couldn't find the suggested amount of seasoning per pound of meat, So I divided out the package that is designed for 25 lb and it comes out to about 1 and 1/2 tbsp per pound. I tried one and it was mild, 2 tbsp is spicier. I tried it with beef even though it's probably better with pork. If you use a leaner meat like ground beef or turkey, adding oil helps. I used avocado oil.Very authentic chorizo flavoring, would recommend. I love that I can now make healthier versions of one of my favorite foods.

MAKES EXCELLENT WILD HOG CHORIZO
THIS MIX WORKS VERY WELL, I USED LIKE AN EXTRA OUNCE OF THE MIX FOR 25 POUNDS OF MEAT, FOR THE WILD HOG MEAT I ADDED ABOUT FOUR POUNDS OF PORK FAT, YOU COULD USE BEEF FAT JUST AS WELL AND EASIER TO COME BY. THIS BEING SAID I ADD A BIT OF BACON GREASE IN THE SKILLET WHEN COOKING IT UP BECAUSE IT IS DRY WITH THE WILD HOG. ANYWAY I THINK YOU WILL LIKE IT!

Makes great chorizo!
Highly recommend! Has a great fresh taste and is very simple to make! I would recommend adding the vinegar, the instructions say it’s optional but it gives it that extra little kick that makes chorizo what it is.
