The Kodiak Cakes Plant-Based Classic Flapjack & Waffle Mix is a great packaged pancake and waffle mix to make fluffy pancakes, crisp but tender waffles, banana nut muffins, and even plant-based brownies. I tried this mix to make waffles and the banana nut muffin recipe that's on the back of the box and both recipes came out perfectly. The waffles were crunchy on the outside and fluffy on the inside, while the banana nut muffins were tender and delicious with a lightly crispy muffin top. Each box has a little over 3 cups of dry mix, which is enough to make several waffles, flapjacks, muffins, or brownies. To make the pancake, you simply need to add water, and for waffles, you simply need to add water and oil. The mix itself isn't all too sweet and is highly customizable. This mix is not gluten-free and does contain trace amounts of egg, milk, soy, and tree nuts, so beware if you're allergic to any of these things. As far as flavor goes, this is mix is very tasty and is also very protein packed. Overall, if you're looking for a protein-packed plant-based pancake and waffle mix, this is a great option to consider.

I received this on April 30, 2021 with an expiration date of December 2, 2021, a shelf life of 7 months. Created and distributed by Kodiak Cakes, Utah, USA.These Kodiak Cakes pancakes are not light and fluffy, but dense and moist. Although they did raise up into beautiful, golden pancakes, they are heavier than a normal pancake with a lot more texture and a good flavor.These pancakes were moist enough that I didn’t find them dry, and I’m not normally a pancake person due to pancakes’ usual dry texture. (I’m more of a waffles person.) So that was a major win for me. Overall, pleased with these pancakes, especially because they’re healthy and high in protein.As the parent of kiddos with autism, there are causes near and dear to my heart. This just-add-water mix contains no eggs or milk, although it's not labeled specifically as vegan, just as "no egg or dairy." That's because it may contain "trace amounts of egg, milk, soy, and tree nuts due to processing on shared equipment." Why even bother to make and market a plant-based flapjack mix then? Even though the wholegrain flavor is good, without any weird aftertastes, the absence of milk and eggs makes the texture turn a bit gummy and strange in my mouth. If you can't eat dairy or eggs, you wouldn't expect the flapjacks coming from this mix to be exactly like the "real" thing, but you also wouldn't be buying this if it contains trace amounts of those ingredients. Go figure.The directions say to add 3/4 cup of water to 1 cup of mix. For thicker pancakes, they say to add less water. Less water? The pancake batter was so thick that I could scoop it out of the bowl like muffin batter. I ahad to add a little more water, and even then I still had to spread the batter on the griddle with the back of a spoon. Because the batter isn't pourable, perfectly round pancakes are out of the question. The thickness makes it a little difficult to cook them all the way through without the exterior becoming too dark, but it can be done.The mix uses whole grain wheat and oat flours as well as pea and brown rice protein concentrates. For each 1/2 cup of mix, designated as a serving, you get a whopping 12 grams of protein.These flapjacks taste good enough to eat without syrup or toppings, if you can get past the texture in your mouth. I like the whole grain flavor with a little sweetness. The extra protein keeps me full for hours. But I see the failure to certify this plant-based mix as vegan as a major oversight. The pancakes coming from the mix aren't good enough to satisfy people who CAN eat dairy or eggs but choose not to.-- Debbie Lee Wesselmann

Bought these at my grocery store, before buying a large batch from Amazon. Do not bother. They are gross. They don’t brown, no matter how long you leave them on a hot waffle iron. They may be high protein, but they are low quality. I will make my own as a smart, vegan cook.

I like both the taste and the nutritional profile of this pancake mix. A serving has 12g of protein from pea protein concentrate, and it also packs a good amount of fiber (4g) due to the use of whole grain wheat. The texture is different than a regular buttermilk pancake -- it's a more hearty texture, and has more density. I don't have any issue with the texture, but others in the household were less enamored with it. But, regardless of what was thought about the texture, all found the taste to be very good.It's a complete mix, so all that is needed is water for pancakes, and water & oil for waffles. I like that it includes other ways to use the mix, such as making muffins or brownies. I'm fine with using these strictly for pancakes but it's nice to have options.I've used other Kodiak products and have always been 100% satisfied with their quality. This is no exception. It is a great way to get a plant-based high protein, whole grain breakfast (or whenever meal) that tastes very good.
