Will this hold an iphone 8plus in an otterbox defender case?

yes it should. i have a Samsung S8+, and it holds no problem.

Will this fit a Note 10 Plus in a Denfender case?

Yes, this mount would be a good choice for that phone in a case.

Will this withstand the turbulance in a small aircraft?

It can withstand the turbulance, although if the suction cup is exposed to the sunlight for an extended amount of time, the mount will start to slip.

Why phone turning left or right when on X grip? I think it shouldn't.

So that you can align the phone vertically or horizontally as needed
