Does it have to be mounted on the wall, looking for one that doesnt have to be mounted?

I mounted mine on a porch support, I honestly don't see how you could use it without it being mounted on something--makes it much easier to use. Kitty

Can I simply, and functionally, mount this to a 2' piece of 2x4, and leave it flat on a counter?

It needs to be mounted securely vertical. If not mounted vertically any liquid left in cans will leak on surface and it takes a reasonable amount of leverage to crush cans.
